Enchilades
INGREDIENTS:
- 2 Cups Brown Rice – Cooked
- 1 small can Black Beans
- 1 small onion diced
- 1 small can whole kernel corn
- 1 small green pepper diced
- 10 oz. Fat Free Cottage Cheese or 6 oz. Grated Soy Cheese
- 1 Pkg. Whole wheat, corn or flour tortillas
- Salsa to Taste
DIRECTIONS:
- Mix first six ingredients together, stir well.
- Fill tortilla shells, roll, and place in baking dish.
- Cover with fat free cheese and bake at 350º for 45 minutes.
- Serve with Cold Salsa on the side or poured over hot tortillas. Enjoy!
